This is just a helpful guide to those who never played the VN or are confused at times with 'different' versions of the character. It only applies with Saber (Arturia) here, so:

♔ Fate/Zero: Light novels adapted in an anime show that take place during the 90s, in the Fourth Grail War. Saber is summoned by Emiya Kiritsugu and wears a suit. Her wish is to save her kingdom, redo history to change the events that came to its destruction. The events that took place in this war threw her into a deeper depression during which she started to wish she was not chosen as king at all.

♔ Fate/Stay Night: Visual novel, there's a eroge and an all ages version, that takes place in the 2000s, during the Fifth Grail War. Saber is summoned by Emiya Shirou, the adopted son of Kiritsugu, and her wish is to redo the sword-selection ceremony so another was chosen as king in her place. There are three routes which changes significantly the characters, the development and focus. All the routes have bad/dead ends which are also canon (a total of 45 of them), but I will not go in detail about each of those, ok?

- Fate route. The first one and common route, focused on a star-crossed love story between Saber and Shirou. It only has one ending, Continuation of the Dream, which was completed years later with the bonus of End of the Dream, Realta Nua (Last Episode is the recap of Fate route) where Saber and Shirou are reunited in Avalon after an eternity apart. The 2006 anime version is mostly based on this route, even if the adaptation, aside of the music, is mediocre.
- Unlimited Blade Works route. UBW for short, it focuses on Shirou's struggle with his ideals and its impossibility by facing a jaded, future version of himself who was betrayed by those ideals, Archer. Saber in this route doesn't fall in love with Shirou, the romance is between Rin and Shirou, although it has a secondary focus. Around the middle, Caster steals Shirou's rights as Master and forces Saber to serve her, but Rin and she eventually forge a new contract to protect Shirou. She comes at peace with her choices and stops looking for the destruction of her legend like in Fate route (although not the happiness of a person, her wish to protect a love one like in Fate). There are two endings: Brilliant Years (True end) in which Saber returns to her time after destroying the Grail and Sunny Days (good end) where Saber stays as Rin's familar. During 2010, there was a very choppy movie based on UBW, and recently, 2014-2015, an anime adapted to base on the full route. (Amat Saber is taken from UBW, True End).
- Heaven's Feel route. HF for short. This route focuses on the sins and the dirty secrets of the Holy Grail War, the three families (+Emiya) that started the ritual and their real motives and how they destroyed their descendants, among the family and sibling love focus, there's also a love story between Sakura and Shirou. Saber isn't in love with Shirou in this route either and she's taken out early by the combination of the Servant-eating shadow and True Assassin. She doesn't die but she's given a "Dragon" role to Dark Sakura's Boss role as Saber Alter, Servant of Sakura. Alter is Arturia tainted by Angra Mainyu (all Evils of the World), so she's colder and more aloof, she suppresses her anger (her eyes are golden because she's furious), also more cynical, self-destructive and jaded. Unlike UBW and Fate routes, she never achieves peace and is killed by Shirou (her Servant body, that is). The endings of the route are The Return of the Spring (True) where Shirou lives and is given a new body, and Cherry Blossom's Dream (normal) where he's dead and Sakura awaits his return until she dies of age. HF will be have a theatrical movie adaptation in the future.

There is also Fate/Hollow Ataraxia, but doesn't apply in this case, as all the rest of the spinoffs.
